The University of Hawaii at Hilo’s Col-lege of Continuing Education and Community Service is accepting enrollment in the Master Food Preserver Certificate Program.
Classes are from 8:30 a.m.-4:30 p.m. Aug. 26-28 and Sept. 2-4, 10 and 11 at the Maluhia Building, 891 Ululani St., and “The Kitchen,” 615 Haihai St. The cost is $400.
People interested in developing their own jams and jellies, canning acidic foods, pressure canning low-acid foods, pickling and fermenting, drying, freezing and the art of charcuterie are encouraged to become certified Hawaii master food preservers. Those able to commit to an eight-day, 64-hour training period and volunteer at least 20 hours in a year might be qualified to attend.
Kauai-born instructor Kalen Kelekoma is a certified master food preserver who has taught children and adults on Kauai and Oahu and manages the weekly Waipa Tuesday Farmers Market, Poi Day Thursday and coordinates the Waipa Music &Mango and Kalo festivals.
