Tai Manu-Olevao tallied a season-high 16 kills and Kalei Greeley added 11 as the Rainbow Wahine (7-1) beat a top-5 team for the first time since 2013.
Tied at 6-6 in the decisive set, Taylor and Manu-Olevao each had a kill as UH pulled away by winning six consecutive points.
It was the first five-set match for both teams this season and the first time this season that Hawaii has had three players reach double digits in kills.
The Gators (5-1) won the hitting battle .306-.263, but they were hurt by 12 service errors. Alex Holston finished with 19 kills and 210 digs for Florida.
Olivia Magill added eight kills for UH, Emily Maglio came off the bench to tie her career-high with six and Hawaii libero Savanah Kahakai posted a career-high 19 digs.
