In an effort to support island sustainability and local food security efforts, the Hawaii Community College Office of Continuing Education and Training is offering three new courses.
“Edible and Medicinal Mushroom Cultivation” will provide participants with an introduction to the role mushrooms play in the environment, their medicinal uses, and provide hands-on experience inoculating their own oyster and shiitake kits to take home and grow.
“Fermenting Vegetables for Preservation and Health” will explore the health benefits of lacto-fermentation, the ancient technique for preserving vegetables, enhancing nutrients and creating dynamic flavors.
“Edible Landscaping for Backyards and Beyond” will teach you how to transform your lanai and lawn, field and fence, into an abundant oasis of edible and multifunctional plants.
