The College of Continuing Education and Community Service at the University of Hawaii at Hilo is offering a class titled “The Art of Butchering and Curing Meat for Home Food Preservation” from 1-4 p.m. Nov. 19 and Dec. 3 at The Kitchen, 615 Haihai St. in Hilo.
Tuition is $80.
Chef Dean Shigeoka, co-founder of The Kitchen, will cover a wide range of topics including meat dressing, salting, corning and aging. Shigeoka also will provide participants with an introduction to the craft of charcuterie as they make sausage and porchetta, corn their own beef and taste samples.
The instruction and hands-on experience will provide students with the basic skills needed to begin experimenting with home butchery and charcuterie.
